Latest Feature: The Goat Trail

Rashie takes us through OGNI's signature dish—the smoky goat rezala. This dish, deeply rooted in tradition and personal history, is a true representation of Rashie’s culinary prowess and cultural heritage.

“The smoky goat rezala we serve at OGNI is a Bengali-style curry that traces its origins back to the Mughal era,” Rashie explains with enthusiasm. “It’s a dish that carries a lot of history, introduced to the subcontinent by Persian conquerors. Goat meat became a staple, celebrated for its flavor and versatility.”

What sets this dish apart is its aromatic complexity. “We use a blend of garlic, ginger, mace, and nutmeg, along with cumin, coriander, turmeric, chili, and cashew nuts,” Rashie says. “These ingredients are common in subcontinental cooking and create a symphony of flavors that are both rich and harmonious.”
